Ingredients
  1. FOR ROLL
  2. ½ cup rolled oats, ground into flour
  3. 1 cup almond meal
  4. 1 cup hazelnut, activated
  5. 1 cup soft dates, soaked
  6. 2 tsp matcha powder
  7. 1 tsp lemon juice
  8. FOR FILLING
  9. ⅓ cup soft dates
  10. ⅛ cup filtered water
  11. 1 cup goji berry
Instructions
  1. FOR ROLL - Place all ingredients (rolled oats, almond meal, hazelnut) into a food processor and process into meal consistency. Add remaining ingredients and process until the mixture form a sticky ball. Place a large sheet of non-stick baking paper on a flat surface. Remove mixture from food processor and place on a sheet of baking paper. Form into a dough, then roll dough between 2 sheets of baking paper by using a rolling pin to roll both length ways and sideways. The dough should be approx. 11 by 7 inch rectangle.
  2. FOR FILLING - Put dates and water in the blender and blend until smooth. Remove from blender and place in a medium sized bowl. Add in goji berries and stir to mix well. Remove the baking paper and place the filling on half of the rectangle and fold over to seal it. Press the log firmly. Once rolled, cut into one and a half inch slices. Enjoy!
