Ingredients
  1. 1 cup (dry) quinoa
  2. 2 cups water or broth**
  3. (optional) 1/2 tsp. salt, or more/less to taste
Instructions
  1. Place quinoa in a fine-mesh strainer and rinse thoroughly under running water.
  2. Transfer quinoa to a medium saucepan. Add water or broth, and bring to a boil over medium-high heat. Reduce heat to medium-low, cover and simmer for 15-20 minutes or until water is absorbed. Remove from heat and let sit, covered, for 5 minutes.
  3. Fluff quinoa with a fork. Serve immediately, or cover and refrigerate for up to 5 days.
Notes
  1. **Any kind of broth works great for quinoa! I typically cook mine with low-sodium chicken broth. Be sure to adjust the amount of extra salt depending on the saltiness of the broth.
